Graduate schools
Several graduate schools have emerged in recent years. The graduate schools are designed to contribute to and support the training of Danish researchers.
The Danish Meat Research Institute co-finances the following PhD educations at the graduate schools FOOD (the Veterinary and Agricultural University and the Danish Technical University), CISP (the Danish Technical University, the University of Copenhagen and the IT University), BIOP (the Danish Technical University and Risø National Laboratory) and ITMAN (the Danish Technical University):
- The importance of the microenvironment for germination of spores, growth and cereulide production of Bacillus cereus in new composite products
- Risk of toxin production by moulds in meat products
- CT-scanning and automated segmentation of pig carcasses
- The virtual slaughterhouse: Construction of a virtual slaughterknife
- Modelling of the diversity of pig carcasses
- Optimized quality of case-ready pork
- Initial detection of quality diversities by use of chemical marcers
- Minimization of protein oxidation in meat and meat products by use of antioxidants
- Effect og LTLT (low temp long time) on eating quality in pork and beef
- From fork to farm - development of a feedback model from abattoir to farmer
