Danish pork is market-leading. In order to maintain its leading position, the research at DMRI must always be one step ahead of customer demands. The customers not only expect a good taste sensation; they also expect the animals to be properly treated.

Therefore, our work covers a wide range of subjects among which are animal welfare during transport and slaughtering as well as high meat quality in slaughter operations and meat processing, and positive eating quality of retail meat cuts.

Target:

To develop methods and knowledge that

·         Improve slaughter quality, raw material quality and eating quality
·         Improve the nutritional quality
·         Ensure a proper treatment of animals before and during slaughter
